cranberry-sauceWith Thanksgiving around the corner (at least here in Canada) many of us are scrambling to get our Turkey dinners organized and ready for our families to enjoy!  Unfortunately, as amazing as big holidays like this are in bringing family together, many of us are already dreading the uncomfortable, heavy feeling that our bodies will be left with after dinner and most likely the next day (or two or three) as well!

Well, this Thanksgiving doesn’t have to be like the others…there are many healthy alternatives to some of your family’s favorite Thanksgiving recipes including one of my family’s favorite:  Cranberry Sauce.  Now, to make sure I give full disclosure here, this is one of my mom’s favorite recipes…one that she has been making for as long as I remember and one that everyone raves about!!  It took me a while to get her to agree to have it posted on my website but I finally got her okay!  So without further ado…here it is (and you won’t believe how absolutely simple and easy it is to make)!

Ingredients:

1 package of fresh cranberries
2 mandarin oranges cut into small pieces
2 or 3 handfuls of raisins
Honey to taste
A few tablespoons of water
Optional:  nutmeg, cinnamon

Instructions:

  1. In a saucepan, add the cranberries, mandarin oranges and few tablespoons of water and simmer for about 10 to 15 min until the cranberries burst.
  2. At this point, you can add the raisins and the honey (to taste).  You can also spice up your cranberry sauce by adding some nutmeg or cinnamon.
  3. Remove from heat.  Cool completely to room temperature and then chill in refrigerator.  The Cranberry sauce will thicken as it cools!
  4. Enjoy!!
